The choolha

A choolha is a clay stove. No dial, no thermostat — you feed it and you read it. It is the oldest kitchen in Bihar and it is stubbornly slow, which is exactly the point: a handi sealed over coals builds a depth that a gas flame in ten minutes never will.
We are not a restaurant. There is no dining room, no host, no view. We are a kitchen on the third floor in Baljeet Nagar with a short menu we cook properly, and a box that goes out the door to Shadipur, Patel Nagar and the streets around them.
Eight dishes. All chicken except the litti.
We would rather cook a small menu well.
